Pilot Projects Funded Through the E.A. Martin Program

One of the purposes of the Ethel Austin Martin Endowed Program in Human Nutrition is to promote multidisciplinary and collaborative educational and research projects in the area of human nutrition. Funds allotted to this program are determined annually, and typically there are funds available to support 1 or 2 pilot projects that relate to human nutrition and involve collaboration among two or more departments or colleges. Proposals submitted are reviewed and scored by several members of the Ethel Austin Martin Nutrition Committee, as well as internal and external reviewers. Below is a brief summary of the pilot projects chosen between 1998 and 2000.
1998: Dr. Kronberg (Animal and Range Sciences) and co-investigators Drs. Evenson (Station Biochemistry), Halaweish (Chemistry and Biochemistry), and Rice (Chemistry and Biochemistry): "Beef, Cattle Production and Leafy Spurge."
Dr. Muthukumarappan (Agricultural Engineering) and co-investigator Dr. Julson (Agricultural Engineering); "Changes in Isoflavones during Extrusion Processing."
Dr. Finn (HPER and Athletics) and co-investigators Mona Rosene (Nutrition, Food Science and Hospitality) and Dr. Kattelmann (Nutrition, Food Science and Hospitality); "The Effects of Glutamine Supplementation on Lean Body Mass and Performance in Wrestlers During a Weight Reduction Program."
1999: Dr. Dwivedi (Pharmaceutical Sciences) and co-investigator Dr. Mistry (Dairy Science); "Effects of Dietary Mustard Oil on the Development of Colon Cancer." Dr. Rickerl (Plant Science) and co-investigator Dr. Swanson (Nutrition, Food Science and Hospitality); "Female Friendly Food Systems."
Dr. Muthukumarappan (Agricultural Engineering) and co-investigators Drs. Halaweish (Chemistry and Biochemistry), Wulf (Animal and Range Sciences) and Henning (Department of Dairy Science); "Application of Ozone Technology in Beef Processing."
Dr. Granholm (Biology and Microbiology) and co-investigator Dr. Diggins (Biology and Microbiology); "Obesity and Infertility: The Relationship of Body Fat and Fertility."
2000: Dr. Epperson (Veterinary Science) and Co-investigator Dr. Pritchard (Animal and range Sciences); "Assesing Antibiotic Resistance in Cattle Using a Microbial Population Approach."
